I was doing my weekly shopping at my local Trader Joe’s on Sunday trying to plan a weeks worth of meals so I’m not at the market every other day, when my son comes running back from the demo bar very excited about what they were serveing. It was easy and very good, so I bought all the ingredients on the spot. I love how they make it so easy for me.
My daughter isn’t into spicy food, and was at a friend’s for dinner, so I tossed my original dinner plan and decided to make this dish. The three of us loved it, and I’ll be adding this one into our dinner rotation. I’ll have to find another sauce for my daughter’s bowl.
What you Need
- 1 package Korean Pork Shoulder
- 1 package fresh rice noodles
- 1 bottle spicy Thai peanut vinaigrette
- 1 bag of shredded cabbage, or other green leaf lettuce.
What To Do
Heat the pork shoulder according to the package.
Boil water and drop the rice noodles in the boiling water in a colander for 10-15 seconds. Rinse with cold water.
Chop up the port shoulder into bit size pieces, and toss together with noodles, cabbage and Thai peanut vinaigrette to taste.
